Recipe Wednesday: Crab Cakes

So recently, I've been contemplating my blog.
I started this blog as a way to keep in touch with family back home and for my own personal record of our year in Newtok. 
Well, I'm not in Newtok anymore and I'm still bloggin'.
I've been trying to think of ways that I can make it fit more into our life now in Seward.
And in doing that, I will be more structured and timely with my posts, because well, let's be honest... I haven't really had a set schedule of my posts.
I'll write three in a row, then not write for another week.
Sorry about that!

So like I said, I have been thinking of ways to write that now fit my life here in Seward.
And what I've come up with are two days a week that have a theme. Today will be one of those themes:

Recipe Wednesday

My life now consists of a lot of cooking. If family isn't in town, it's a pretty good bet that I'm fixing supper. I am really starting to love it. And not half bad either! I thought it would be a good and fun weekly post to show you all my favorite dish of the week.
And I'm always looking for great recipes, so my hope is that you'll comment on my post and give me one of yours. So you see, it's a win-win for everyone!

With that being said, I hope you follow this blog even more now because things are heating up around here!
I'll explain the other theme when it's time.

So without further ado, my first Recipe Wednesday!

Crab Cakes

One night, Joshua and I decided to go out for dinner and get crab legs. 
FYI: That post will be tomorrow!
Well, Joshua and I couldn't eat a 3 pound tub of crab legs in one sitting so we had a ton of extras. You can't just throw those babies out! How often do you get fresh, Alaskan crab? And are willing to pay for it?? (That's the real question)

So I took the extra legs home, started looking, and found this easy crab cake recipe.

Ingredients:

 // 1 pound of crab meat, picked free of shells
// 1/3 cup crushed crackers (I used Ritz)
// 3 green onions (both green and white parts), finely chopped
// 1/2 cup finely chopped bell pepper
// 1/4 cup mayonnaise
// 1 egg
// 1 teaspoon Worcestershire sauce
// 1 teaspoon dry mustard (I looked up equivalent servings and used yellow mustard)
// 1/2 lemon, juiced
// 1/4 teaspoon garlic powder
// 1 teaspoon salt
// Dash of cayenne pepper
// Flour of dusting
// 1/2 cup peanut oil

Directions:

In a large bowl, mix all the ingredients together, except for the flour and peanut oil. Shape into patties and dust with flour.

Heat oil in a large skillet over medium heat. When oil is hot, carefully place crab cakes, in batches, in pan and fry until browned, about 4 to 5 minutes. Carefully flip crab cakes and fry on other side until golden brown, about 4 minutes. Serve warm with preferred sauce.

That's it! So easy, right! And they were delicious!

^^ This might have been the hardest part, shaping them into patties. Be careful when patty-making! ^^

^^ Fry in batches - in goes quicker! Also, be careful when flipping patties over. They tend to fall apart! ^^

^^ Then, when they are finished, they will turn a golden brown. Serve with favorite dipping sauce - I mixed ketchup and mayonnaise together. So good! ^^

But like I said, pay extra attention when forming them into patties and when you try to flip them on the pan. This is what can happen:
